Warm Potato Salad With Pickled Walnut Vinaigrette
Ingredients
- potatoes
- oil
- salt
- pepper
- vinegar
- 1 onion, sliced very thin (or 2 tbsp grated onion)
- 2 tbsp vinegar from pickled walnuts (or 1 tbsp mushroom catsup)
- chopped parsley
- chopped pickled beets (optional)
Method
- 1 Wash potatoes and boil with skins on until done. Drain, dry, and peel.
- 2 In a bowl, beat oil, salt, pepper, and vinegar until mixed. Add sliced or grated onion.
- 3 Add hot sliced potatoes to the dressing. Toss to coat. Sprinkle with pickled walnut vinegar or mushroom catsup.
- 4 Let stand to cool. Turn onto a cold platter and garnish with chopped parsley and pickled beets if desired.
