Warm Potato Salad With Pickled Walnut Vinaigrette

Ingredients

  • potatoes
  • oil
  • salt
  • pepper
  • vinegar
  • 1 onion, sliced very thin (or 2 tbsp grated onion)
  • 2 tbsp vinegar from pickled walnuts (or 1 tbsp mushroom catsup)
  • chopped parsley
  • chopped pickled beets (optional)

Method

  1. 1 Wash potatoes and boil with skins on until done. Drain, dry, and peel.
  2. 2 In a bowl, beat oil, salt, pepper, and vinegar until mixed. Add sliced or grated onion.
  3. 3 Add hot sliced potatoes to the dressing. Toss to coat. Sprinkle with pickled walnut vinegar or mushroom catsup.
  4. 4 Let stand to cool. Turn onto a cold platter and garnish with chopped parsley and pickled beets if desired.
