Ingredients

  • ½ cup vinegar
  • ¼ cup cold water
  • 2 eggs, well-beaten
  • 1 tablespoon sugar
  • 3 tablespoons butter
  • Salt and pepper to taste
  • Cream (optional, up to 1 cup)
  • Boiled potatoes, sliced
  • Chopped onion
  • Chopped parsley

Method

  1. 1 In a double boiler, combine vinegar, water, beaten eggs, sugar, and butter. Season with salt and pepper.
  2. 2 Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let cool.
  3. 3 Stir in cream if desired. Combine the cooled sauce with sliced boiled potatoes, chopped onion, and parsley.
