Warm Potato Salad With Creamy Vinegar Dressing
Ingredients
- ½ cup vinegar
- ¼ cup cold water
- 2 eggs, well-beaten
- 1 tablespoon sugar
- 3 tablespoons butter
- Salt and pepper to taste
- Cream (optional, up to 1 cup)
- Boiled potatoes, sliced
- Chopped onion
- Chopped parsley
Method
- 1 In a double boiler, combine vinegar, water, beaten eggs, sugar, and butter. Season with salt and pepper.
- 2 Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let cool.
- 3 Stir in cream if desired. Combine the cooled sauce with sliced boiled potatoes, chopped onion, and parsley.
