Walnut Topped Turkey Chili
Ingredients
- 1 tbsp extra virgin olive oil
- 1 medium onion, chopped
- 1 large carrot, sliced
- 1/4 tsp salt
- 2 tsp cumin
- 2 tbsp chili powder
- 1 lb ground turkey breast (85% lean)
- 2 small red or yellow bell peppers, minced
- 2 (16-ounce) cans red kidney beans, rinsed and drained
- 2 (14.5-ounce) cans tomatoes, chopped or crushed
- 1 1/2 cups walnuts, lightly toasted and chopped
- Flat-leaf parsley, chopped (optional)
Method
- 1 Heat olive oil in a large, deep pan over medium heat. Add onion and sauté until translucent.
- 2 Add carrots, salt, cumin, and chili powder; sauté until spices are toasted.
- 3 Crumble in ground turkey and sprinkle in minced bell peppers. Cook until turkey is white and opaque.
- 4 Add kidney beans and tomatoes. Stir gently to avoid breaking beans.
- 5 Bring to a boil, then reduce heat to medium-low. Cover partly and simmer for 20 minutes.
- 6 Serve hot, topped with toasted walnuts and optional parsley.
