Walnut Topped Turkey Chili

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 medium onion, chopped
  • 1 large carrot, sliced
  • 1/4 tsp salt
  • 2 tsp cumin
  • 2 tbsp chili powder
  • 1 lb ground turkey breast (85% lean)
  • 2 small red or yellow bell peppers, minced
  • 2 (16-ounce) cans red kidney beans, rinsed and drained
  • 2 (14.5-ounce) cans tomatoes, chopped or crushed
  • 1 1/2 cups walnuts, lightly toasted and chopped
  • Flat-leaf parsley, chopped (optional)

Method

  1. 1 Heat olive oil in a large, deep pan over medium heat. Add onion and sauté until translucent.
  2. 2 Add carrots, salt, cumin, and chili powder; sauté until spices are toasted.
  3. 3 Crumble in ground turkey and sprinkle in minced bell peppers. Cook until turkey is white and opaque.
  4. 4 Add kidney beans and tomatoes. Stir gently to avoid breaking beans.
  5. 5 Bring to a boil, then reduce heat to medium-low. Cover partly and simmer for 20 minutes.
  6. 6 Serve hot, topped with toasted walnuts and optional parsley.
