Walnut Raisin Sandwich Cookies
Ingredients
- 1 egg
- 1 cup sugar
- 1/2 cup Crisco
- 1/2 cup milk or cream
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 3 1/2 cups flour
- 1/2 teaspoon salt
- 1 cup chopped raisins
- 1 tablespoon flour
- 1/2 cup sugar
- 1/2 cup water
- 1/2 cup chopped walnuts
Method
- 1 Cream Crisco and sugar, then mix in salt, beaten egg, milk, and vanilla.
- 2 Sift flour with baking powder and soda, then mix into the wet ingredients to form a soft dough.
- 3 Roll dough very thin and cut into shapes using a cookie cutter.
- 4 Prepare filling by cooking sugar, flour, raisins, walnuts, and water in a saucepan until thick; cool completely.
- 5 Spread half the cookies with filling, top with remaining cookies, and press edges together.
- 6 Bake on greased tins in a moderately hot oven (375°F) for 15 minutes.
