Walnut And Celery Salad
Ingredients
- 3 cups fresh, crisp celery, finely cut
- 2 cups walnuts, shelled
- 1 small onion, sliced
- 1 bay leaf
- 1 clove
- 12 peppercorns
- Mayonnaise or cream dressing
- Tender green celery leaves, for garnish
Method
- 1 Place walnuts in a saucepan with the sliced onion, bay leaf, clove, and peppercorns.
- 2 Cover with boiling water and cook for 10-15 minutes.
- 3 Drain the walnuts, plunge them into cold water to remove skins, and let them cool.
- 4 Chill the walnuts in the refrigerator until ready to serve.
- 5 Toss the cooled walnuts with the finely cut celery.
- 6 Add mayonnaise or cream dressing, garnish with celery leaves, and serve.
