Walnut And Celery Salad

Ingredients

  • 3 cups fresh, crisp celery, finely cut
  • 2 cups walnuts, shelled
  • 1 small onion, sliced
  • 1 bay leaf
  • 1 clove
  • 12 peppercorns
  • Mayonnaise or cream dressing
  • Tender green celery leaves, for garnish

Method

  1. 1 Place walnuts in a saucepan with the sliced onion, bay leaf, clove, and peppercorns.
  2. 2 Cover with boiling water and cook for 10-15 minutes.
  3. 3 Drain the walnuts, plunge them into cold water to remove skins, and let them cool.
  4. 4 Chill the walnuts in the refrigerator until ready to serve.
  5. 5 Toss the cooled walnuts with the finely cut celery.
  6. 6 Add mayonnaise or cream dressing, garnish with celery leaves, and serve.
