Waldorf Salad With Yogurt Dressing
Ingredients
- 1/4 cup walnuts, chopped
- 2 apples, cored and diced
- 1 cup celery, diced
- 1/2 cup raisins
- 1/4 cup plain non-fat yogurt
- 1/2 teaspoon sugar
- 1 teaspoon lemon juice
Method
- 1 Preheat oven to 350°F. Spread chopped walnuts on a baking sheet and toast for 12-15 minutes, stirring occasionally, until evenly toasted. Let cool.
- 2 In a large bowl, combine the diced apples, celery, raisins, and toasted walnuts.
- 3 In a small bowl, whisk together the yogurt, sugar, and lemon juice until smooth.
- 4 Pour the dressing over the fruit and vegetable mixture. Toss lightly to coat evenly. Serve immediately or refrigerate.
