Vintage Albumen Coconut Macaroons
Ingredients
- 1 packet Nelson's Albumen
- 3 teaspoons cold water
- ¼ pound finely sifted sugar
- 2 ounces desiccated coconut
Method
- 1 Beat the albumen with cold water to a strong froth.
- 2 Mix in the sifted sugar and desiccated coconut.
- 3 Drop small pieces of the mixture onto wafer paper sheets on a baking tin, keeping them in a rocky shape.
- 4 Bake in a moderate oven (350°F) for 10 minutes or until crisp.
