Vintage Albumen Coconut Macaroons

Ingredients

  • 1 packet Nelson's Albumen
  • 3 teaspoons cold water
  • ¼ pound finely sifted sugar
  • 2 ounces desiccated coconut

Method

  1. 1 Beat the albumen with cold water to a strong froth.
  2. 2 Mix in the sifted sugar and desiccated coconut.
  3. 3 Drop small pieces of the mixture onto wafer paper sheets on a baking tin, keeping them in a rocky shape.
  4. 4 Bake in a moderate oven (350°F) for 10 minutes or until crisp.
