Vinegar Stewed Sprats With Allspice

Ingredients

  • Sprats, washed and dried
  • Peppercorns
  • Allspice
  • Salt
  • Vinegar
  • Bay leaf (optional)

Method

  1. 1 Layer the washed and dried sprats in a stew-pan.
  2. 2 Between each layer of fish, add three peppercorns, three allspice, and a few grains of salt. Add a bay leaf if desired.
  3. 3 Barely cover the fish with vinegar and stew over a slow fire for one hour. Do not let them boil.
