Vinegar Lemon Mayonnaise
Ingredients
- 2 egg yolks
- 1 pint olive oil
- 2 tbsp vinegar
- 2 tbsp lemon juice
- ½ tsp salt
- Pinch of cayenne or paprika
- 1 tsp mustard (optional)
- 1 tsp powdered sugar (optional)
Method
- 1 Chill all utensils and ingredients thoroughly.
- 2 Beat egg yolks with salt, cayenne, mustard, and sugar until smooth.
- 3 Add 1 tsp vinegar and mix well.
- 4 Slowly add oil drop by drop while beating constantly.
- 5 Once thickened, add oil in a thin stream, alternating with remaining vinegar and lemon juice if needed.
- 6 Adjust consistency with extra oil or lemon juice as desired.
