Vinegar Lemon Mayonnaise

Ingredients

  • 2 egg yolks
  • 1 pint olive oil
  • 2 tbsp vinegar
  • 2 tbsp lemon juice
  • ½ tsp salt
  • Pinch of cayenne or paprika
  • 1 tsp mustard (optional)
  • 1 tsp powdered sugar (optional)

Method

  1. 1 Chill all utensils and ingredients thoroughly.
  2. 2 Beat egg yolks with salt, cayenne, mustard, and sugar until smooth.
  3. 3 Add 1 tsp vinegar and mix well.
  4. 4 Slowly add oil drop by drop while beating constantly.
  5. 5 Once thickened, add oil in a thin stream, alternating with remaining vinegar and lemon juice if needed.
  6. 6 Adjust consistency with extra oil or lemon juice as desired.
