Vienna Bread Rolls
Ingredients
- 2 lb Vienna flour
- 2 oz butter
- 1 oz German yeast
- 1 pint milk
- 1 tsp salt
Method
- 1 Rub butter into flour and mix in salt.
- 2 Mix tepid milk with yeast until smooth.
- 3 Make a well in flour and stir in milk mixture smoothly.
- 4 Knead lightly for one minute, then let rise in a warm place for two hours.
- 5 Shape into rolls or twists, place on floured tins, and rise for ten minutes.
- 6 Bake in a quick oven (425°F) for 10-20 minutes. Brush with milk or egg white near the end to glaze.
