Vienna Bread Rolls

Ingredients

  • 2 lb Vienna flour
  • 2 oz butter
  • 1 oz German yeast
  • 1 pint milk
  • 1 tsp salt

Method

  1. 1 Rub butter into flour and mix in salt.
  2. 2 Mix tepid milk with yeast until smooth.
  3. 3 Make a well in flour and stir in milk mixture smoothly.
  4. 4 Knead lightly for one minute, then let rise in a warm place for two hours.
  5. 5 Shape into rolls or twists, place on floured tins, and rise for ten minutes.
  6. 6 Bake in a quick oven (425°F) for 10-20 minutes. Brush with milk or egg white near the end to glaze.
