Vidalia Onion And Bell Pepper Strata

Ingredients

  • 1 Vidalia onion, sliced (divided)
  • 1/2 red bell pepper, sliced vertically
  • 1 green bell pepper, sliced vertically
  • 4 tablespoons olive oil
  • 4 large eggs
  • 1/2 cup egg whites
  • 1/8 teaspoon ground black pepper
  • 1/2 cup whole-grain bread, cubed
  • 10 ounces reduced-fat Italian blend cheese, shredded
  • 1 cup cherry tomatoes, diced
  • 1 garlic clove, minced
  • Cooking spray

Method

  1. 1 Preheat oven to 350°F. Slice the Vidalia onion vertically and reserve about 1/4 of it for the salsa.
  2. 2 Heat olive oil in a skillet over medium heat. Sauté the onion and bell peppers for 5-8 minutes until tender and lightly browned. Remove from heat.
  3. 3 In a large bowl, beat eggs, egg whites, milk, and black pepper. Spray an 8- or 9-inch baking pan with cooking spray.
  4. 4 Arrange bread cubes in the bottom of the pan. Sprinkle with shredded cheese, then top with the sautéed vegetables.
  5. 5 Pour the egg mixture over the layers. Bake uncovered for 45 minutes until set and internal temperature reaches 160°F.
  6. 6 While the strata bakes, dice the reserved onion and tomatoes, then mix with minced garlic to make the fresh salsa.
