Vidalia Onion And Bell Pepper Strata
Ingredients
- 1 Vidalia onion, sliced (divided)
- 1/2 red bell pepper, sliced vertically
- 1 green bell pepper, sliced vertically
- 4 tablespoons olive oil
- 4 large eggs
- 1/2 cup egg whites
- 1/8 teaspoon ground black pepper
- 1/2 cup whole-grain bread, cubed
- 10 ounces reduced-fat Italian blend cheese, shredded
- 1 cup cherry tomatoes, diced
- 1 garlic clove, minced
- Cooking spray
Method
- 1 Preheat oven to 350°F. Slice the Vidalia onion vertically and reserve about 1/4 of it for the salsa.
- 2 Heat olive oil in a skillet over medium heat. Sauté the onion and bell peppers for 5-8 minutes until tender and lightly browned. Remove from heat.
- 3 In a large bowl, beat eggs, egg whites, milk, and black pepper. Spray an 8- or 9-inch baking pan with cooking spray.
- 4 Arrange bread cubes in the bottom of the pan. Sprinkle with shredded cheese, then top with the sautéed vegetables.
- 5 Pour the egg mixture over the layers. Bake uncovered for 45 minutes until set and internal temperature reaches 160°F.
- 6 While the strata bakes, dice the reserved onion and tomatoes, then mix with minced garlic to make the fresh salsa.
