Vegetarian Ground Beef Chili
Ingredients
- 3/4 pound lean ground beef (10% fat)
- 1/2 cup chopped green pepper
- 1/2 large chopped onion
- 1/2 cup chopped celery
- 2/3 cup canned kidney beans, drained and rinsed
- 1/2 cup sweet corn
- 1 can (8 oz) tomato sauce
- 1 cup chopped fresh tomatoes
- 1 dash black pepper
- 1/2 teaspoon garlic powder
- 2 teaspoons chili powder
Method
- 1 Wash hands and work area. Place ground beef in a non-stick skillet sprayed with cooking spray.
- 2 Brown meat over medium-high heat, stirring to break into pieces. Drain fat, blot with paper towels, then rinse with hot water and drain again.
- 3 Add green pepper, onion, and celery to the skillet. Cook until softened.
- 4 Stir in kidney beans, corn, tomato sauce, chopped tomatoes, black pepper, garlic powder, and chili powder.
- 5 Simmer over low heat for 20 minutes. Serve hot in bowls, as a dip with tortilla chips, or on a bun.
