Vegetable Topping Tortilla Pizzas

Ingredients

  • 2 6-inch flour tortillas
  • 1/2 teaspoon extra virgin olive oil
  • 1 cup sliced mushrooms
  • 1 green bell pepper, thinly sliced
  • 1 cup red onion, thinly sliced
  • 2 teaspoons minced garlic
  • 1/2 cup low-sodium tomato sauce
  • 1/2 cup shredded fat-free mozzarella cheese
  • 2 teaspoons grated reduced-fat Parmesan cheese

Method

  1. 1 Heat oven to 400°F. Place tortillas on baking sheets and cook, flipping once, until crisp (about 10 minutes). Set aside.
  2. 2 Heat oil in a large skillet over medium heat. Add mushrooms, peppers, onions, and garlic. Cook until soft (about 10 minutes). Set aside.
