Vegetable Topping Tortilla Pizzas
Ingredients
- 2 6-inch flour tortillas
- 1/2 teaspoon extra virgin olive oil
- 1 cup sliced mushrooms
- 1 green bell pepper, thinly sliced
- 1 cup red onion, thinly sliced
- 2 teaspoons minced garlic
- 1/2 cup low-sodium tomato sauce
- 1/2 cup shredded fat-free mozzarella cheese
- 2 teaspoons grated reduced-fat Parmesan cheese
Method
- 1 Heat oven to 400°F. Place tortillas on baking sheets and cook, flipping once, until crisp (about 10 minutes). Set aside.
- 2 Heat oil in a large skillet over medium heat. Add mushrooms, peppers, onions, and garlic. Cook until soft (about 10 minutes). Set aside.
- 3 Spread tortilla crust with tomato sauce, vegetable mixture, mozzarella, and Parmesan cheese.
- 4 Transfer pizzas to baking sheets. Cook until cheese is melted and edges are golden brown (about 10 minutes).
