Vegetable Spaghetti With Chili Powder
Ingredients
- 2 cups onions, small yellow, cut into eighths
- 2 cups tomatoes, chopped, peeled, fresh ripe (about 1 lb)
- 1 1/2 cups squash, thinly sliced yellow and green (about 1 lb)
- 2/3 cup green beans, cut fresh (about 1/2 lb)
- 2 tablespoons water
- 1 clove garlic, minced
- 1/2 teaspoon chili powder
- Salt and black pepper to taste
- 1 can tomato paste (6 oz, low-sodium)
- 1 pound spaghetti, uncooked
- 1/2 cup Parmesan cheese, grated
Method
- 1 Combine onions, tomatoes, squash, green beans, water, garlic, chili powder, salt, pepper, and tomato paste in a large saucepan.
- 2 Cook for 10 minutes, then stir in tomato paste. Cover and cook gently for 15 minutes, stirring occasionally until vegetables are tender.
- 3 Cook spaghetti in unsalted water according to package directions.
- 4 Spoon sauce over drained hot spaghetti and sprinkle with Parmesan cheese.
