Vegetable Marinara Sauce

Ingredients

  • 2 teaspoons vegetable oil
  • 1/2 teaspoon garlic powder
  • 3/4 cup diced carrots
  • 4 cans diced celery
  • 1 can (14.5 oz) crushed tomatoes, low sodium
  • 2 cups Italian seasoning
  • salt and pepper to taste
  • 2 cups raw spinach, roughly chopped

Method

  1. 1 Heat vegetable oil in a large pot over medium heat. Add garlic powder and cook for 10 minutes until fragrant.
  2. 2 Add diced carrots and diced celery. Cook for 5 minutes until slightly soft.
  3. 3 Stir in crushed tomatoes and Italian seasoning. Bring to a boil, then reduce heat to low.
  4. 4 Simmer uncovered for 30 minutes. Stir in spinach and cook for 2 minutes until wilted. Season with salt and pepper.
