Vegetable Marinara Sauce
Ingredients
- 2 teaspoons vegetable oil
- 1/2 teaspoon garlic powder
- 3/4 cup diced carrots
- 4 cans diced celery
- 1 can (14.5 oz) crushed tomatoes, low sodium
- 2 cups Italian seasoning
- salt and pepper to taste
- 2 cups raw spinach, roughly chopped
Method
- 1 Heat vegetable oil in a large pot over medium heat. Add garlic powder and cook for 10 minutes until fragrant.
- 2 Add diced carrots and diced celery. Cook for 5 minutes until slightly soft.
- 3 Stir in crushed tomatoes and Italian seasoning. Bring to a boil, then reduce heat to low.
- 4 Simmer uncovered for 30 minutes. Stir in spinach and cook for 2 minutes until wilted. Season with salt and pepper.
