Vegetable Lentil Soup

Ingredients

  • 1 pint lentils
  • 2 quarts water
  • 1.5 ounces butter
  • 1 carrot
  • 1 onion
  • 1 turnip
  • 1 potato
  • 1 teaspoon salt
  • 1 tablespoon minced parsley

Method

  1. 1 Slice the carrot, onion, turnip, and potato. Fry them in the butter for five minutes.
  2. 2 Place the vegetables in a saucepan with the lentils and water. Boil for one and a half hours.
  3. 3 Add salt and pepper to taste. Strain the soup, returning the liquid to the saucepan.
  4. 4 Stir in the minced parsley, boil for three minutes, and serve.
