Vegetable Lentil Soup
Ingredients
- 1 pint lentils
- 2 quarts water
- 1.5 ounces butter
- 1 carrot
- 1 onion
- 1 turnip
- 1 potato
- 1 teaspoon salt
- 1 tablespoon minced parsley
Method
- 1 Slice the carrot, onion, turnip, and potato. Fry them in the butter for five minutes.
- 2 Place the vegetables in a saucepan with the lentils and water. Boil for one and a half hours.
- 3 Add salt and pepper to taste. Strain the soup, returning the liquid to the saucepan.
- 4 Stir in the minced parsley, boil for three minutes, and serve.
