Vegetable Fried Rice
Ingredients
- 2 cups cooked white rice
- 2 tablespoons vegetable oil
- 1/2 cup chopped celery
- 1/4 cup chopped onion
- 1 package (10 ounce) frozen vegetables
- 1 tablespoon reduced-sodium soy sauce
- 1 dash black pepper
Method
- 1 Prepare 2 cups of cooked white rice according to package directions.
- 2 Chop 1/2 cup celery and 1/4 cup onion. Heat vegetable oil in a skillet or large frying pan over medium-high heat.
- 3 Add celery and onion to the pan. Stir-fry for 2 minutes.
- 4 Add frozen vegetables. Stir-fry until tender-crisp.
- 5 Add cooked rice, soy sauce, and pepper. Stir-fry for 2 minutes until rice is heated through and flavors are blended.
