Vegetable Fried Rice

Ingredients

  • 2 cups cooked white rice
  • 2 tablespoons vegetable oil
  • 1/2 cup chopped celery
  • 1/4 cup chopped onion
  • 1 package (10 ounce) frozen vegetables
  • 1 tablespoon reduced-sodium soy sauce
  • 1 dash black pepper

Method

  1. 1 Prepare 2 cups of cooked white rice according to package directions.
  2. 2 Chop 1/2 cup celery and 1/4 cup onion. Heat vegetable oil in a skillet or large frying pan over medium-high heat.
  3. 3 Add celery and onion to the pan. Stir-fry for 2 minutes.
  4. 4 Add frozen vegetables. Stir-fry until tender-crisp.
  5. 5 Add cooked rice, soy sauce, and pepper. Stir-fry for 2 minutes until rice is heated through and flavors are blended.
