Vegetable Egg Fried Rice
Ingredients
- 2 tablespoons cooking oil
- 1 cup uncooked rice
- 3 tablespoons minced onion
- 1/2 cup chopped carrot
- 2 cups water
- 4 eggs, beaten
- 1/4 cup egg whites, beaten
- 1/2 cup non-fat milk
- 2 tablespoons peas
- soy sauce, to taste
Method
- 1 Heat oil in a frying pan over medium heat. Add rice, onion, and carrots; stir often until lightly browned.
- 2 Slowly add water. Reduce heat, cover, and simmer until liquid is absorbed and rice is tender, about 20 minutes.
- 3 In a bowl, beat eggs, egg whites, milk, peas, and soy sauce. Pour this mixture over the hot rice in the pan.
- 4 Cook on medium heat, gently drawing a spatula across the bottom and sides to scramble eggs as they firm up.
