Vegetable Egg Fried Rice

Ingredients

  • 2 tablespoons cooking oil
  • 1 cup uncooked rice
  • 3 tablespoons minced onion
  • 1/2 cup chopped carrot
  • 2 cups water
  • 4 eggs, beaten
  • 1/4 cup egg whites, beaten
  • 1/2 cup non-fat milk
  • 2 tablespoons peas
  • soy sauce, to taste

Method

  1. 1 Heat oil in a frying pan over medium heat. Add rice, onion, and carrots; stir often until lightly browned.
  2. 2 Slowly add water. Reduce heat, cover, and simmer until liquid is absorbed and rice is tender, about 20 minutes.
  3. 3 In a bowl, beat eggs, egg whites, milk, peas, and soy sauce. Pour this mixture over the hot rice in the pan.
  4. 4 Cook on medium heat, gently drawing a spatula across the bottom and sides to scramble eggs as they firm up.
