Vegetable And Herb Soup With Bread Crumbs

Ingredients

  • 2 heads green cabbage
  • 2 heads cos lettuce
  • 1 head hard cabbage
  • 6 onions
  • 1 large carrot
  • 2 turnips
  • 3 heads celery
  • Fresh tarragon, chervil, parsley, and thyme, chopped
  • 1/4 lb butter
  • Flour
  • 3 quarts boiling water
  • Stale bread crumbs

Method

  1. 1 Chop the cabbages, lettuces, onions, carrot, turnips, and celery finely. Chop the herbs.
  2. 2 Fry the flour in the butter until golden.
  3. 3 Add the vegetables and herbs to the butter mixture, then pour in the boiling water.
  4. 4 Boil for two hours, stirring well occasionally.
  5. 5 Before serving, stir in stale bread crumbs made from the upper part of a loaf.
