Vegetable And Herb Soup With Bread Crumbs
Ingredients
- 2 heads green cabbage
- 2 heads cos lettuce
- 1 head hard cabbage
- 6 onions
- 1 large carrot
- 2 turnips
- 3 heads celery
- Fresh tarragon, chervil, parsley, and thyme, chopped
- 1/4 lb butter
- Flour
- 3 quarts boiling water
- Stale bread crumbs
Method
- 1 Chop the cabbages, lettuces, onions, carrot, turnips, and celery finely. Chop the herbs.
- 2 Fry the flour in the butter until golden.
- 3 Add the vegetables and herbs to the butter mixture, then pour in the boiling water.
- 4 Boil for two hours, stirring well occasionally.
- 5 Before serving, stir in stale bread crumbs made from the upper part of a loaf.
