Vegetable And Egg Frittata
Ingredients
- 1 ½ cups cold boiled vegetables, minced (green peas, carrots, turnips, potatoes)
- 4 eggs
- 1 tablespoon fine wheatmeal
- ¼ cup milk
- Salt and pepper to taste
- A pinch of nutmeg
- 1 oz butter
Method
- 1 Beat the eggs and milk together in a bowl.
- 2 Rub the wheatmeal into the egg mixture until smooth.
- 3 Stir in the minced vegetables, salt, pepper, and nutmeg.
- 4 Melt butter in a skillet over medium heat.
- 5 Pour in the mixture and fry like an omelet until set.
- 6 Serve immediately with your choice of sauce.
