Vegetable And Cheese Omelet
Ingredients
- 1 cup broccoli florets
- 1 large red bell pepper, cut into strips
- 16 button mushrooms, sliced
- Cooking spray
- 8 eggs
- 1/4 cup egg whites
- 1/4 cup fat-free milk
- 2 tablespoons ricotta cheese
- 1/8 teaspoon grated Parmesan cheese
- 1/8 teaspoon salt
- Pepper
Method
- 1 Cut vegetables as directed.
- 2 Whisk eggs and milk in a medium mixing bowl.
- 3 Spray a 10-inch non-stick skillet with cooking spray and heat over medium heat.
- 4 Add broccoli, peppers, and mushrooms; sauté for 3-5 minutes, then remove from pan.
- 5 Spray skillet with cooking spray as needed. Add 1/4 of the egg mixture to the hot skillet, letting it spread to cover the bottom.
- 6 When the egg begins to thicken, sprinkle with 1/4 of the Parmesan cheese, dab with ricotta, and spread a portion of the vegetable mixture.
- 7 Fold the other half of the omelet over the vegetables and cook for about 1 more minute.
- 8 Slide onto a plate, season lightly with salt and pepper, and garnish with remaining vegetable sauté mix.
