Ingredients

  • 1 cup broccoli florets
  • 1 large red bell pepper, cut into strips
  • 16 button mushrooms, sliced
  • Cooking spray
  • 8 eggs
  • 1/4 cup egg whites
  • 1/4 cup fat-free milk
  • 2 tablespoons ricotta cheese
  • 1/8 teaspoon grated Parmesan cheese
  • 1/8 teaspoon salt
  • Pepper

Method

  1. 1 Cut vegetables as directed.
  2. 2 Whisk eggs and milk in a medium mixing bowl.
  3. 3 Spray a 10-inch non-stick skillet with cooking spray and heat over medium heat.
  4. 4 Add broccoli, peppers, and mushrooms; sauté for 3-5 minutes, then remove from pan.
  5. 5 Spray skillet with cooking spray as needed. Add 1/4 of the egg mixture to the hot skillet, letting it spread to cover the bottom.
  6. 6 When the egg begins to thicken, sprinkle with 1/4 of the Parmesan cheese, dab with ricotta, and spread a portion of the vegetable mixture.
  7. 7 Fold the other half of the omelet over the vegetables and cook for about 1 more minute.
  8. 8 Slide onto a plate, season lightly with salt and pepper, and garnish with remaining vegetable sauté mix.
