Veal Stock Vegetable Soup With Croutons

Ingredients

  • 2 heads lettuce, chopped fine
  • Butter
  • 1 onion, sliced
  • Salt and pepper
  • 6 cups veal stock
  • 1 ½ cups peas
  • 1 ½ cups string beans
  • 1 ½ cups asparagus tips
  • Croutons

Method

  1. 1 Chop fine two heads of lettuce. Fry the lettuce and one sliced onion in butter until brown.
  2. 2 Season with salt and pepper. Add six cups of veal stock.
  3. 3 Add one and one-half cupfuls each of peas, string beans, and asparagus tips.
  4. 4 Simmer for forty minutes. Serve with croutons.
