Veal Stock Vegetable Soup With Croutons
Ingredients
- 2 heads lettuce, chopped fine
- Butter
- 1 onion, sliced
- Salt and pepper
- 6 cups veal stock
- 1 ½ cups peas
- 1 ½ cups string beans
- 1 ½ cups asparagus tips
- Croutons
Method
- 1 Chop fine two heads of lettuce. Fry the lettuce and one sliced onion in butter until brown.
- 2 Season with salt and pepper. Add six cups of veal stock.
- 3 Add one and one-half cupfuls each of peas, string beans, and asparagus tips.
- 4 Simmer for forty minutes. Serve with croutons.
