Veal Stock Spring Vegetable Soup
Ingredients
- 4 young carrots, cut fine
- 4 young turnips, cut fine
- 2 leeks, cut fine
- Veal stock (sufficient quantity)
- 1 cup fresh green peas
Method
- 1 Cook the carrots, turnips, and leeks in veal stock.
- 2 Add enough veal stock to reach the desired quantity and stir in the fresh green peas.
- 3 Boil for 15 minutes, season to taste, and serve.
