Veal Scaloppine With Parsley And Tomato Sauce

Ingredients

  • 1 lb lean veal, sliced
  • 1/4 medium onion, chopped
  • 2 tbsp oil
  • 1 tbsp butter
  • 1 tsp flour
  • 1/4 cup parsley, chopped
  • 1/2 clove garlic, minced
  • 1/2 cup hot water
  • 2 tbsp tomato sauce
  • Salt to taste
  • Toast diamonds for serving

Method

  1. 1 Chop the onion. Heat oil and butter in a saucepan, then add the onion and sauté until softened.
  2. 2 Layer the veal slices in the pan. Season with salt and a small piece of butter. Cook over medium heat until the bottom layer is browned.
  3. 3 Sprinkle flour over the meat, then add chopped parsley and minced garlic. Stir to combine.
  4. 4 Separate the cutlets, mix them with the sauce, and pour in hot water and tomato sauce. Simmer slowly until cooked through. Serve with toast diamonds.
