Veal Meatballs With Spaghetti

Ingredients

  • 1 cup minced cold veal
  • 1 tbsp finely minced blanched almonds or chopped mushrooms
  • 1 beaten egg
  • Cracker dust
  • Deep fat for frying
  • Spaghetti
  • Salted water
  • Butter
  • 1 cup strained tomato sauce

Method

  1. 1 Mince cold veal and season to taste. Mix in a good gravy to moisten slightly.
  2. 2 Stir in minced almonds or chopped mushrooms. Bind with a beaten egg and stir over heat for one minute. Cool.
  3. 3 Flour hands and form mixture into egg-shaped balls. Roll in egg and cracker dust.
  4. 4 Fry balls in deep fat until golden. Arrange boiled spaghetti on a platter border.
  5. 5 Butter the spaghetti generously and pour strained tomato sauce over it. Heap the veal eggs in the center.
