Veal And Oko Gumbo
Ingredients
- 2 tbsp fat
- 1 onion, chopped
- 4 oz fat ham, diced
- 1 qt boiling water
- ½ can tomatoes
- 3 lbs veal, cut into pieces
- ½ tsp salt
- 1 qt canned okra
- Boiled rice, for serving
Method
- 1 In 2 tbsp hot fat, brown 1 chopped onion and 4 oz diced fat ham.
- 2 Add 1 qt boiling water, ½ can tomatoes, 3 lbs veal pieces, and ½ tsp salt.
- 3 Stew for 2 hours. Add 1 qt canned okra and cook for 1.5 hours longer.
- 4 Adjust seasoning 30 minutes before done. Serve with boiled rice.
