Ingredients

  • 1 lb veal, boneless, skinless, tendon-free
  • 1 slice ham
  • 1 whole egg
  • Flour, for dusting
  • 2-3 slices onion
  • Parsley
  • Celery
  • Carrot
  • Butter
  • Salt and pepper
  • Spices
  • 1/2 cup water
  • 1/2 tbsp flour
  • Juice of 1/2 lemon
  • 1 hard-boiled egg (optional)

Method

  1. 1 Chop the veal and ham together. Season with salt, pepper, and spices, then mix in the whole egg.
  2. 2 With moistened hands, form the meat mixture into a large ball. Roll it lightly in flour.
  3. 3 Finely chop the onion, parsley, celery, and carrot. Sauté in butter until browned.
  4. 4 Place the meatball in the pan with the vegetables. Brown well on all sides.
  5. 5 Dissolve 1/2 tbsp flour in 1/2 cup water. Pour into the pan, cover, and simmer on low heat until cooked through, avoiding burning.
  6. 6 Serve with the gravy, squeezing fresh lemon juice over the top before plating.
