Vanilla Sponge Cakes With Icing

Ingredients

  • 1/2 cup shortening
  • 1 cup granulated sugar
  • 2/3 cup water
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1/4 teaspoon salt
  • 3 teaspoons baking powder
  • 3 egg whites

Method

  1. 1 Cream shortening and sugar until light. Beat in water slowly, then vanilla.
  2. 2 Sift flour, salt, and baking powder twice. Stir into creamed mixture.
  3. 3 Fold in beaten egg whites.
  4. 4 Spoon batter into small cake tins or a shallow pan.
  5. 5 Bake in a hot oven (425°F) for 10-15 minutes. Cool and spread with icing.
