  • 1/4 teaspoon salt
  • 6 eggs
  • 1 tablespoon vanilla
  • 1 1/4 cups sugar
  • 1 teaspoon lemon extract

Method

  2. 2 Separate the eggs; beat the yolks and mix with sugar and salt.
  3. 3 Stir the yolk mixture into the hot milk until thickened.
  4. 4 Remove from heat, beat egg whites, and fold into the custard.
  5. 5 Add vanilla and lemon extract, then cool completely.
  6. 6 Freeze according to your ice cream maker's instructions.
