Vanilla Ladyfingers

Ingredients

  • 6 eggs, separated
  • 1¼ cups powdered sugar
  • 1 cup sifted flour
  • 1/8 teaspoon salt
  • Vanilla, lemon, or orange-flower water, for flavoring
  • Extra powdered sugar for dusting
  • Egg white, for sticking
  • Jam, for filling (optional)

Method

  1. 1 Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. 2 Beat egg yolks and powdered sugar until light and creamy. Stir in your chosen flavoring.
  3. 3 Whip egg whites with salt until very firm peaks form. Gently fold the whites into the yolk mixture, then fold in the sifted flour.
  4. 4 Transfer batter to a pastry bag fitted with a large tip. Pipe strips 4.5 inches long onto the prepared sheet.
  5. 5 Dust lightly with sugar and bake for 10-12 minutes until a light crust forms but remains pale.
  6. 6 Cool completely. For fingers, stick two together with a dab of egg white. For balls, sandwich with jam.
