Vanilla Ladyfingers
Ingredients
- 6 eggs, separated
- 1¼ cups powdered sugar
- 1 cup sifted flour
- 1/8 teaspoon salt
- Vanilla, lemon, or orange-flower water, for flavoring
- Extra powdered sugar for dusting
- Egg white, for sticking
- Jam, for filling (optional)
Method
- 1 Preheat oven to 350°F. Line a baking sheet with parchment paper.
- 2 Beat egg yolks and powdered sugar until light and creamy. Stir in your chosen flavoring.
- 3 Whip egg whites with salt until very firm peaks form. Gently fold the whites into the yolk mixture, then fold in the sifted flour.
- 4 Transfer batter to a pastry bag fitted with a large tip. Pipe strips 4.5 inches long onto the prepared sheet.
- 5 Dust lightly with sugar and bake for 10-12 minutes until a light crust forms but remains pale.
- 6 Cool completely. For fingers, stick two together with a dab of egg white. For balls, sandwich with jam.
