Vanilla Bean Whipped Cream

Ingredients

  • 1/4 pint heavy cream
  • 1 egg white
  • Sugar to taste
  • 1 inch vanilla bean, split, seeds scraped

Method

  1. 1 Combine cream and egg white in a chilled bowl. If warm, place bowl in ice water.
  2. 2 Whisk vigorously until the mixture becomes quite thick.
  3. 3 Add sugar and vanilla seeds to taste. Whip briefly to incorporate.
