Vanilla Bean Apricot Cream
Ingredients
- 1 pint heavy cream
- 4 egg whites
- apricot jam
- 2 inches vanilla pod
- 2 teaspoons castor sugar
Method
- 1 Split the vanilla pod and combine it with the sugar and cream.
- 2 Whip the cream and egg whites together until stiff peaks form.
- 3 Remove the vanilla pod from the mixture.
- 4 Place a teaspoon of apricot jam in the bottom of each custard glass.
- 5 Fill the glasses with the whipped cream and serve immediately.
