Vanilla Bean Apricot Cream

Ingredients

  • 1 pint heavy cream
  • 4 egg whites
  • apricot jam
  • 2 inches vanilla pod
  • 2 teaspoons castor sugar

Method

  1. 1 Split the vanilla pod and combine it with the sugar and cream.
  2. 2 Whip the cream and egg whites together until stiff peaks form.
  3. 3 Remove the vanilla pod from the mixture.
  4. 4 Place a teaspoon of apricot jam in the bottom of each custard glass.
  5. 5 Fill the glasses with the whipped cream and serve immediately.
