Vanilla Apple Custard With Browned Sugar Top
Ingredients
- 1 pound apples, peeled
- Sugar to taste
- 1 strip vanilla bean
- 3 large eggs
- 1 tablespoon butter
- White sugar for topping
Method
- 1 Peel and cook the apples until soft, then rub them through a sieve to create a smooth purée.
- 2 Sweeten the purée well and flavor with vanilla. Allow the mixture to cool completely.
- 3 Beat the three eggs and mix them thoroughly into the cold apple purée.
- 4 Pour the mixture into an oven-safe dish. Dot the top with butter and sprinkle generously with sugar.
- 5 Bake in a moderate oven (350°F) for 30 minutes, watching closely to prevent burning. Serve hot or cold.
