Vanilla Almond Custard

Ingredients

  • 1 pint milk
  • sugar to taste
  • 1 tsp vanilla extract
  • 4 egg yolks
  • 1 tbsp cornstarch
  • 2 tbsp chopped almonds

Method

  1. 1 Sweeten the milk with sugar and flavor with vanilla. Bring to a boil in a saucepan.
  2. 2 In a separate bowl, whisk egg yolks and cornstarch until smooth.
  3. 3 Slowly pour the hot milk into the egg mixture while whisking constantly to temper.
  4. 4 Return the mixture to the saucepan and cook over medium heat, stirring, until thickened. Do not boil.
  5. 5 Stir in chopped almonds, pour into a mold, and let cool to set.
