Uncooked Tomato Pasta Salad
Ingredients
- 6 large tomatoes, cut into chunks
- 1/2 tablespoon minced garlic
- 1/2 medium onion, finely chopped
- 3 tablespoons green pepper, finely chopped
- 1/2 teaspoon fresh basil, chopped
- 1 tablespoon dried oregano
- 6 cups olive oil
- Salt and pepper to taste
- 6 tablespoons cooked pasta
- Grated Parmesan cheese
Method
- 1 Chop tomatoes and mix with garlic, onion, green pepper, basil, oregano, olive oil, salt, and pepper in a large bowl.
- 2 Let the mixture stand at room temperature for about 20 minutes to allow flavors to meld.
- 3 Toss with hot cooked pasta or rice and top with grated Romano or Parmesan cheese before serving.
