Two Stage Currant Jam With Raisins
Ingredients
- 1 lb currants
- ¾ lb lump sugar
- ¼ lb currants (for final jam stage)
- 1 lb raisins (optional, per 5 lb currants)
Method
- 1 Place 1 lb currants in a preserving pan. Put ¾ lb sugar in the center without touching the pan sides.
- 2 Boil gently on a clear fire for about 30 minutes. Do not stir.
- 3 Skim the jelly carefully from the top.
- 4 Add ¼ lb fresh currants to the remaining jelly. Stir well and boil thoroughly until jam consistency is reached.
