Two Stage Currant Jam With Raisins

Ingredients

  • 1 lb currants
  • ¾ lb lump sugar
  • ¼ lb currants (for final jam stage)
  • 1 lb raisins (optional, per 5 lb currants)

Method

  1. 1 Place 1 lb currants in a preserving pan. Put ¾ lb sugar in the center without touching the pan sides.
  2. 2 Boil gently on a clear fire for about 30 minutes. Do not stir.
  3. 3 Skim the jelly carefully from the top.
  4. 4 Add ¼ lb fresh currants to the remaining jelly. Stir well and boil thoroughly until jam consistency is reached.
