Two Loaf Wheat Bread

Ingredients

  • 2 cups scalded milk or boiled water
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 yeast cake dissolved in ½ cup boiled and cooled water
  • About 7 cups well-dried sifted flour

Method

  1. 1 Combine scalded milk (or boiled water), sugar, and salt in a mixing bowl. Let cool until lukewarm.
  2. 2 Add yeast cake dissolved in ½ cup boiled and cooled water. Mix in sifted flour to form a stiff dough.
  3. 3 Knead until elastic. Cover and let rise in a 70°F environment until doubled in bulk.
  4. 4 Punch down dough, knead slightly, then let rise again until doubled.
  5. 5 Shape into two loaves, place in buttered pans, and let rise a third time.
  6. 6 Bake for one hour.
