Two Loaf Wheat Bread
Ingredients
- 2 cups scalded milk or boiled water
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 yeast cake dissolved in ½ cup boiled and cooled water
- About 7 cups well-dried sifted flour
Method
- 1 Combine scalded milk (or boiled water), sugar, and salt in a mixing bowl. Let cool until lukewarm.
- 2 Add yeast cake dissolved in ½ cup boiled and cooled water. Mix in sifted flour to form a stiff dough.
- 3 Knead until elastic. Cover and let rise in a 70°F environment until doubled in bulk.
- 4 Punch down dough, knead slightly, then let rise again until doubled.
- 5 Shape into two loaves, place in buttered pans, and let rise a third time.
- 6 Bake for one hour.
