Turmeric Cumin Red Lentil Curry

Ingredients

  • 1/2 cup dried red lentils
  • 1 teaspoon vegetable oil
  • 1/2 teaspoon salt
  • 1 1/2 cups water
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1 teaspoon sugar
  • 2 teaspoons vegetable oil
  • 2 chili peppers
  • 1 large onion, chopped

Method

  1. 1 Rinse lentils in a strainer. Combine with 1 tsp oil and 1/2 tsp salt. Boil in 1 1/2 cups water until soft and yellow.
  2. 2 Stir turmeric, cumin, and sugar into the boiled lentils.
  3. 3 Heat remaining oil in a pan. Add split chili peppers and chopped onion; stir until onion is light brown.
  4. 4 Add 2 tbsp lentil mixture to onions, stir 1 minute. Add remaining lentils and 1 cup water; boil 2 minutes. Serve over rice.
