Turmeric Cumin Red Lentil Curry
Ingredients
- 1/2 cup dried red lentils
- 1 teaspoon vegetable oil
- 1/2 teaspoon salt
- 1 1/2 cups water
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- 1 teaspoon sugar
- 2 teaspoons vegetable oil
- 2 chili peppers
- 1 large onion, chopped
Method
- 1 Rinse lentils in a strainer. Combine with 1 tsp oil and 1/2 tsp salt. Boil in 1 1/2 cups water until soft and yellow.
- 2 Stir turmeric, cumin, and sugar into the boiled lentils.
- 3 Heat remaining oil in a pan. Add split chili peppers and chopped onion; stir until onion is light brown.
- 4 Add 2 tbsp lentil mixture to onions, stir 1 minute. Add remaining lentils and 1 cup water; boil 2 minutes. Serve over rice.
