Turkey Taco Tostadas
Ingredients
- 2 cups cooked turkey, cut into bite-sized pieces
- 2 tablespoons taco seasoning
- 1 1/2 cups water
- 4 corn tortillas
- 1/4 cup refried beans
- 1/4 cup shredded cheddar or Monterey Jack cheese
- 1/2 cup chopped tomatoes
- 1/2 cup shredded lettuce
- 2 tablespoons chopped onion
- 1/2 cup taco sauce
- 1/2 cup plain yogurt, optional
- guacamole, optional
Method
- 1 Preheat oven to 375°F. In a skillet over medium heat, combine turkey, taco seasoning, and water. Simmer for 5 minutes, stirring occasionally.
- 2 Place tortillas on a baking sheet and bake for 4-7 minutes until crispy.
- 3 Spread each tortilla with refried beans, then top with turkey mixture and cheese.
- 4 Return to oven for 2-3 minutes until cheese melts. Top with tomatoes, lettuce, onion, taco sauce, and optional yogurt or guacamole.
