Turkey And Vegetable Shepherd's Pie
Ingredients
- 1 1/3 cups diced potatoes with skin
- 1/2 pound skim milk
- 2 tablespoons ground turkey (85% lean)
- 1 package flour
- 1 can frozen mixed vegetables (10 ounces)
- 14.5 ounces low sodium vegetable stock
- shredded cheese (optional)
Method
- 1 Place diced potatoes in a saucepan, cover with water, and bring to a boil. Reduce heat and simmer for about 15 minutes.
- 2 Drain potatoes and mash them. Stir in milk and set aside.
- 3 Preheat oven to 375°F.
- 4 Brown turkey in a large skillet. Stir in flour and cook for 1 minute, stirring constantly.
- 5 Add vegetables and broth to the skillet. Bring to a slow boil.
- 6 Spoon the vegetable and meat mixture into an 8-inch square baking dish. Spread the mashed potatoes over the top.
- 7 Bake for 25 minutes. Serve hot, garnishing with shredded cheese if desired.
