Turkey And Vegetable Shepherd's Pie

Ingredients

  • 1 1/3 cups diced potatoes with skin
  • 1/2 pound skim milk
  • 2 tablespoons ground turkey (85% lean)
  • 1 package flour
  • 1 can frozen mixed vegetables (10 ounces)
  • 14.5 ounces low sodium vegetable stock
  • shredded cheese (optional)

Method

  1. 1 Place diced potatoes in a saucepan, cover with water, and bring to a boil. Reduce heat and simmer for about 15 minutes.
  2. 2 Drain potatoes and mash them. Stir in milk and set aside.
  3. 3 Preheat oven to 375°F.
  4. 4 Brown turkey in a large skillet. Stir in flour and cook for 1 minute, stirring constantly.
  5. 5 Add vegetables and broth to the skillet. Bring to a slow boil.
  6. 6 Spoon the vegetable and meat mixture into an 8-inch square baking dish. Spread the mashed potatoes over the top.
  7. 7 Bake for 25 minutes. Serve hot, garnishing with shredded cheese if desired.
