Turkey And Mandarin Orange Salad

Ingredients

  • 1/4 cup orange juice
  • 2 tablespoons white wine vinegar
  • 1/4 cup onion, finely chopped
  • 1/4 teaspoon salt
  • 1 dash black pepper
  • 1 tablespoon vegetable oil
  • 2 teaspoons Dijon mustard
  • 4 cups salad greens, torn
  • 2 cups cooked turkey breast
  • 1 cup mandarin orange sections, drained
  • 1/2 cup celery, chopped

Method

  1. 1 Combine orange juice, vinegar, onion, salt, pepper, oil, and mustard in a jar with a tight lid. Shake well to emulsify.
  2. 2 In a large bowl, combine salad greens, turkey, orange sections, and celery. Toss gently.
