Turkey And Mandarin Orange Salad
Ingredients
- 1/4 cup orange juice
- 2 tablespoons white wine vinegar
- 1/4 cup onion, finely chopped
- 1/4 teaspoon salt
- 1 dash black pepper
- 1 tablespoon vegetable oil
- 2 teaspoons Dijon mustard
- 4 cups salad greens, torn
- 2 cups cooked turkey breast
- 1 cup mandarin orange sections, drained
- 1/2 cup celery, chopped
Method
- 1 Combine orange juice, vinegar, onion, salt, pepper, oil, and mustard in a jar with a tight lid. Shake well to emulsify.
- 2 In a large bowl, combine salad greens, turkey, orange sections, and celery. Toss gently.
- 3 Drizzle vinaigrette over the salad and serve immediately.
