Turkey And Beef Stuffed Cabbage Rolls
Ingredients
- 1/2 head cabbage
- 1/2 pound ground beef (90% lean)
- 1 pound ground turkey (85% lean)
- 1 small onion, minced
- 1 tablespoon stale whole wheat bread, crumbled
- 1/8 teaspoon water
- 1 can diced tomatoes, low-sodium (14.5 oz)
- 1 small onion, sliced
- 1 cup water
- 1 medium carrot, sliced
- 2 tablespoons lemon juice
- 1 tablespoon brown sugar
- corn starch
Method
- 1 Rinse and core cabbage. Remove 10 outer leaves and simmer in boiling water for 5 minutes. Drain and place on paper towels. Shred 1/2 cup of raw cabbage and set aside.
- 2 Brown ground beef, turkey, and minced onion in a skillet. Drain fat. Mix meat with bread crumbs, 1/8 teaspoon water, pepper, and 1/2 cup reserved tomato juice.
- 3 Place 1/4 cup filling on each cabbage leaf. Fold and place seam-side down in a large skillet. Top with tomatoes, sliced onion, 1 cup water, shredded cabbage, and carrot.
- 4 Cover and simmer for about 1 hour until cabbage is tender, basting occasionally. Remove rolls to a platter and keep warm.
- 5 Mix lemon juice, brown sugar, and corn starch. Add to vegetables in skillet and cook, stirring, until thickened. Serve sauce over cabbage rolls.
