Tuna Salad Sandwich With Vegetables

Ingredients

  • 12 ounces albacore tuna
  • 1/4 cup low-fat mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 teaspoons lemon juice
  • 1/4 cup shredded carrots
  • 1/4 cup thinly sliced red bell peppers
  • 1/4 cup diced celery
  • 6 romaine lettuce leaves, torn in half
  • 12 slices whole wheat bread

Method

  1. 1 In a small bowl, mix together tuna, mayonnaise, Dijon mustard, and lemon juice.
  2. 2 Stir in shredded carrots, thinly sliced red bell peppers, and diced celery.
  3. 3 Place torn lettuce leaves on half of the bread slices.
  4. 4 Spoon tuna mixture on top of the lettuce, cover with remaining lettuce and bread slices.
  5. 5 Wrap sandwiches in plastic wrap or wax paper and keep chilled until ready to serve.
