Tuna Salad Sandwich With Vegetables
Ingredients
- 12 ounces albacore tuna
- 1/4 cup low-fat mayonnaise
- 2 tablespoons Dijon mustard
- 2 teaspoons lemon juice
- 1/4 cup shredded carrots
- 1/4 cup thinly sliced red bell peppers
- 1/4 cup diced celery
- 6 romaine lettuce leaves, torn in half
- 12 slices whole wheat bread
Method
- 1 In a small bowl, mix together tuna, mayonnaise, Dijon mustard, and lemon juice.
- 2 Stir in shredded carrots, thinly sliced red bell peppers, and diced celery.
- 3 Place torn lettuce leaves on half of the bread slices.
- 4 Spoon tuna mixture on top of the lettuce, cover with remaining lettuce and bread slices.
- 5 Wrap sandwiches in plastic wrap or wax paper and keep chilled until ready to serve.
