Tuna Apple Curry Sandwich
Ingredients
- 1 12-oz can chunk light tuna, drained
- 1 apple (such as Fuji or Pink Lady), cored and chopped
- 2 tablespoons low-fat plain yogurt
- 2 tablespoons reduced-fat mayonnaise
- 1/2 cup raisins (or chopped figs)
- 1/8 teaspoon ground black pepper
- 2 tablespoons chopped walnuts
- 1/2 teaspoon curry powder (optional)
- 2 tablespoons chopped fresh parsley (optional)
- 8 leaves lettuce
- 8 slices whole-grain bread
Method
- 1 Core and chop the apple into small pieces.
- 2 In a medium bowl, combine yogurt, mayonnaise, raisins, walnuts, pepper, curry powder, and parsley.
- 3 Gently fold the drained tuna into the mixture until well combined.
- 4 Assemble sandwiches by placing tuna salad and lettuce leaves between slices of bread.
