Trussed Herb Stuffed Haddock

Ingredients

  • 1 haddock
  • 3 tablespoons bread crumbs
  • 2 teaspoons finely chopped parsley
  • 1 teaspoon dried and powdered herbs
  • Salt and pepper to taste
  • 1 egg white or a little milk, for binding

Method

  1. 1 Mix bread crumbs, parsley, herbs, salt, and pepper with egg white or milk to form a stuffing.
  2. 2 Stuff the haddock cavity and secure it with a small skewer.
  3. 3 Truss the fish with string or two skewers in the shape of an S.
  4. 4 Place on a greased baking sheet and dot with butter or dripping.
  5. 5 Bake in a moderate oven (350°F) for about 20 minutes.
  6. 6 Remove skewers, place on a dish, and garnish with parsley before serving.
