Trussed Herb Stuffed Haddock
Ingredients
- 1 haddock
- 3 tablespoons bread crumbs
- 2 teaspoons finely chopped parsley
- 1 teaspoon dried and powdered herbs
- Salt and pepper to taste
- 1 egg white or a little milk, for binding
Method
- 1 Mix bread crumbs, parsley, herbs, salt, and pepper with egg white or milk to form a stuffing.
- 2 Stuff the haddock cavity and secure it with a small skewer.
- 3 Truss the fish with string or two skewers in the shape of an S.
- 4 Place on a greased baking sheet and dot with butter or dripping.
- 5 Bake in a moderate oven (350°F) for about 20 minutes.
- 6 Remove skewers, place on a dish, and garnish with parsley before serving.
