Triple Citrus Marmalade

Ingredients

  • 1 grapefruit
  • 1 orange
  • 1 lemon
  • 5 times as much water as fruit volume
  • Equal weight of sugar to fruit

Method

  1. 1 Finely shave the peel and pulp of the grapefruit, orange, and lemon.
  2. 2 Add five times the volume of water to the fruit and let stand overnight.
  3. 3 Boil the mixture for ten minutes, then let it stand until the next morning.
  4. 4 Add sugar equal in weight to the fruit and cook until the mixture jellies.
  5. 5 Pour the hot marmalade into glasses or jars for storage.
