Triple Citrus Marmalade
Ingredients
- 1 grapefruit
- 1 orange
- 1 lemon
- 5 times as much water as fruit volume
- Equal weight of sugar to fruit
Method
- 1 Finely shave the peel and pulp of the grapefruit, orange, and lemon.
- 2 Add five times the volume of water to the fruit and let stand overnight.
- 3 Boil the mixture for ten minutes, then let it stand until the next morning.
- 4 Add sugar equal in weight to the fruit and cook until the mixture jellies.
- 5 Pour the hot marmalade into glasses or jars for storage.
