Treacle Orange Gingerbread Cookies
Ingredients
- 2 ¼ cups fine flour
- 1 ¾ cups treacle (molasses)
- 6 oz candied orange peel, finely chopped
- ¾ cup moist sugar
- 1 tbsp ground ginger
- 1 tbsp ground allspice
- ¾ cup butter
- 1 egg yolk
- ¼ cup milk
Method
- 1 Sift flour into a large bowl. Add treacle, chopped orange peel, sugar, ginger, and allspice.
- 2 Melt butter until liquid. Combine with dry ingredients and mix well until a cohesive dough forms.
- 3 Cover and let the dough rest in the refrigerator for 12 hours to firm up.
- 4 Preheat oven to 300°F. Roll dough out on a lightly floured surface to ½ inch thickness.
- 5 Cut into 3x2 inch rectangles. Place on a baking sheet ¼ inch apart. Brush with egg yolk mixed with milk.
- 6 Bake for 15 minutes. Remove and immediately slice between cookies with a knife to separate.
