Treacle Orange Gingerbread Cookies

Ingredients

  • 2 ¼ cups fine flour
  • 1 ¾ cups treacle (molasses)
  • 6 oz candied orange peel, finely chopped
  • ¾ cup moist sugar
  • 1 tbsp ground ginger
  • 1 tbsp ground allspice
  • ¾ cup butter
  • 1 egg yolk
  • ¼ cup milk

Method

  1. 1 Sift flour into a large bowl. Add treacle, chopped orange peel, sugar, ginger, and allspice.
  2. 2 Melt butter until liquid. Combine with dry ingredients and mix well until a cohesive dough forms.
  3. 3 Cover and let the dough rest in the refrigerator for 12 hours to firm up.
  4. 4 Preheat oven to 300°F. Roll dough out on a lightly floured surface to ½ inch thickness.
  5. 5 Cut into 3x2 inch rectangles. Place on a baking sheet ¼ inch apart. Brush with egg yolk mixed with milk.
  6. 6 Bake for 15 minutes. Remove and immediately slice between cookies with a knife to separate.
