Treacle Gingerbread With Candied Peel

Ingredients

  • 2 lb all-purpose flour
  • 2 lb treacle (molasses)
  • 0.5 lb moist sugar
  • 3 large eggs
  • 0.5 oz baking soda
  • 8 oz unsalted butter
  • 2 oz ground ginger
  • 0.5 cup water
  • 2 oz candied peel

Method

  1. 1 Preheat oven to 350°F. Grease a large Yorkshire pudding tin or similar rectangular pan.
  2. 2 In a large basin, mix flour, sugar, ginger, candied peel, and baking soda.
  3. 3 Warm treacle, water, and butter in a saucepan until butter melts.
  4. 4 Pour warm wet ingredients into dry ingredients. Mix well, then fold in beaten eggs.
  5. 5 Pour batter into the prepared tin. Smooth top with a knife dipped in hot water.
  6. 6 Score the surface with a knife. Bake for 1.5 hours until firm and golden.
