Treacle Gingerbread With Candied Peel
Ingredients
- 2 lb all-purpose flour
- 2 lb treacle (molasses)
- 0.5 lb moist sugar
- 3 large eggs
- 0.5 oz baking soda
- 8 oz unsalted butter
- 2 oz ground ginger
- 0.5 cup water
- 2 oz candied peel
Method
- 1 Preheat oven to 350°F. Grease a large Yorkshire pudding tin or similar rectangular pan.
- 2 In a large basin, mix flour, sugar, ginger, candied peel, and baking soda.
- 3 Warm treacle, water, and butter in a saucepan until butter melts.
- 4 Pour warm wet ingredients into dry ingredients. Mix well, then fold in beaten eggs.
- 5 Pour batter into the prepared tin. Smooth top with a knife dipped in hot water.
- 6 Score the surface with a knife. Bake for 1.5 hours until firm and golden.
