Treacle Gingerbread Cookies With Candied Orange
Ingredients
- 1 lb treacle (molasses)
- ½ lb unsalted butter
- 1½ lb all-purpose flour
- ½ oz ground ginger
- ½ lb granulated sugar
- 1 tsp ground coriander
- 1 tbsp brandy
- ½ cup candied orange peel, chopped
Method
- 1 Preheat oven to 350°F. Line baking sheets with parchment paper.
- 2 In a saucepan over low heat, melt the butter and treacle together until warm and combined. Remove from heat.
- 3 In a large bowl, whisk together the flour, sugar, ginger, and coriander. Stir in the candied orange peel.
- 4 Pour the warm treacle mixture into the dry ingredients. Add the brandy. Mix until a stiff dough forms.
- 5 Drop spoonfuls of dough onto the prepared sheets, flattening slightly into cakes. Bake for 12-15 minutes until firm.
