Treacle Gingerbread Cookies With Candied Orange

Ingredients

  • 1 lb treacle (molasses)
  • ½ lb unsalted butter
  • 1½ lb all-purpose flour
  • ½ oz ground ginger
  • ½ lb granulated sugar
  • 1 tsp ground coriander
  • 1 tbsp brandy
  • ½ cup candied orange peel, chopped

Method

  1. 1 Preheat oven to 350°F. Line baking sheets with parchment paper.
  2. 2 In a saucepan over low heat, melt the butter and treacle together until warm and combined. Remove from heat.
  3. 3 In a large bowl, whisk together the flour, sugar, ginger, and coriander. Stir in the candied orange peel.
  4. 4 Pour the warm treacle mixture into the dry ingredients. Add the brandy. Mix until a stiff dough forms.
  5. 5 Drop spoonfuls of dough onto the prepared sheets, flattening slightly into cakes. Bake for 12-15 minutes until firm.
