Traditional Yellow Cornmeal Muffins
Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 heaping tablespoon sugar
- 1 heaping teaspoon baking powder
- 1 large egg, well beaten
- 1½ cups sweet milk
- 1 pinch salt
Method
- 1 Preheat oven to 425°F. Generously butter a muffin pan.
- 2 In a bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- 3 Add the beaten egg and milk to the dry ingredients. Beat the mixture vigorously until smooth.
- 4 Pour batter into the prepared muffin cups and bake for 15-20 minutes until golden brown.
